Baba Ganoush

Eat chips and dip with confidence. These are so tasty that everyone will enjoy them, not just the Fodmappers!

Serves 8, 15 minute preparation, 30 minute cooking time.

Ingredients:

2 tsp of FreeFOD garlic replacer
2 small Eggplants (or 1 large)
½ Lemon
2 Tbsp Tahini paste
1 tsp Cumin
Salt to taste

To Garnish
½ tsp Paprika
¼ cup Pine nuts

Directions:

  1. Preheat oven to 180 degrees. Prick eggplants in several places and place in a roasting dish. Cook for 20 – 30 minutes or until eggplants are tender. Allow to cool.
  2. Cut the eggplants in half, scoop out the flesh.
  3. Place eggplants in the food processor with FreeFOD garlic replacer, lemon juice, rind of one lemon, tahini, cumin and salt to taste. Process ingredients until smooth.
  4. Place Baba Ganoush into a serving bowl, sprinkle with paprika and pine nuts (slightly toasted if preferred). Then serve with pita chips. (Check out our recipe for toasted Garlic Pita chips coming soon!)
