Rogan Josh

Slow cooked lamb Rogan Josh, easy and bursting with flavour. Low Fodmap Curry’s are now possible with FreeFOD’s replacers! Serves 6, 30min preperation, 6 hours cooking.

Ingredients:

1kg lamb (2 inch pieces)
4 Tbsp low fodmap flour (for coating lamb)
Butter/Oil
1 Tbsp ground coriander
1 Tbsp ground cumin
1 tsp turmeric
1 tsp chopped fresh ginger
1 tsp chilli powder (for medium heat, remove or reduce for mild)
1 tsp garam masala
1/2 cup low fodmap chicken stock
1 Tin diced tomatoes (400g)
1 tsp FreeFOD Onion Replacer
3 tsp FreeFOD Garlic Replacer
Salt and pepper
Garnish – Coriander, sliced almonds, Low Fodmap yoghurt,
Rice or low fodmap flatbread to serve

Directions:

Coat Lamb with seasoned flour.
Heat butter/oil in a pan and brown the lamb in batches and set aside for later. Add further butter/oil to the pan and cook coriander, cumin, turmeric, ginger, chilli powder and garam masala for four mintues.
Stir in remaining flour and slowly add the stock to combine.
Add tomatoes and while stirring continously bring to the boil. Simmer for three mintues, during this time add both FreeFOD garlic and onion replacers by sprinkling evenly across the top and mix well.
Add the lamb and sauce to the slow cooker, cook on low for 5-6 hours.

Optional: Serve with either rice or flat bread, stir though yoghurt just before serving, top with almonds and fresh coriander.
